Oily fish like salmon are rich in a type of polyunsaturated fat called omega-3 fatty acids ❤️ 🐠 Supports brain function 🧠 🐠 Is anti-inflammatory 🤕 🐠 Lowers risk of heart disease ❤️ 🐠 Supports healthy ageing 🧑🏻🦳👨🏻🦳 Due to the increased interest to post sea food recipes on my Facebook group, I decided to prepare a healthy sea food-based dinner 🐟Wash the potatoes thoroughly in case there is any dirt on them. You can peel the skin or not – I had miniature potatoes and didn’t peel the skin
Cut the potatoes in small bite size pieces and boil them for about 5-7 minutes on the hob at a high temperature

Pre-heat the oven to 180 C (fan)
Drain the potatoes and put them back in the pan – season with salt, vegetable oil and finely chopped fresh dill
Mix well and place on a baking tray
Place the potatoes in the oven for 15 minutes and take the tray out
In the meantime, in a plate mix 2-3 tablespoons of olive oil, the minced garlic, 1 tablespoon of dried oregano, 1 tablespoon of paprika, salt and pepper. Mix well
Add the salmon fillets in the plate and toss to coat
Place the fillets on the baking tray next to the potatoes
Add a bit of butter to each fillet
Arrange lemon slices around the fish
Add some fresh basil
Bake in the oven for 15-20 more minutes
To serve, add some crumbled feta cheese and olives (sliced in half) and some fresh parsley
