Caprese salad ๐ฅ is a simple Italian salad, made of sliced fresh mozzarella, tomatoes, and basil. Just like pizza Margherita, it features the colours of the Italian flag: green, white, and red ๐ฎ๐น.
Now imagine caprese salad ๐ฅ stuffed in lean chicken breasts ๐ seasoned with balsamic vinegar of Modena ๐ I am one of these people who loves balsamic vinegar of Modena ๐. Did you know there are some brands which cost more than a vintage bottle of champagne ๐พ ? I was shocked to find this out! ๐ณ
Back to the recipe: it is quick and easy to prepare, very healthy and it takes less than 40 minutes to cook ๐ฉโ๐ณ It is perfect for a weekday dinner.

Ingredients:
- 4 boneless chicken breasts ๐
- 2 large tomatoes ๐
- 200g of sliced fresh mozzarella ๐ง
- fresh basil ๐ฟ
- 3-4 minced garlic cloves ๐ง
- vegetable oil
- balsamic vinegar of Modena
- dry basil
- dry oregano
- salt ๐ง
- pepper
- 1 tablespoon of sugar โ use brown sugar if you have, I didnโt so I used white one
Method:
- Slice the chicken breasts into โpocketsโ
- Season on both sides with dry oregano, dry basil, salt and pepper to taste and rub it all over the chicken breasts
- Cut the tomatoes and the mozzarella cheese into long slices
- Add tomato slice, mozzarella slice and some fresh basil leaves inside the chicken breasts
- Use tooth picks to seal the contents inside the chicken breasts so the stuffing does not fall out
- Heat 3 spoons of vegetable oil in a skillet to a high temperature
- Place the chicken breasts in the skillet and fry 4-5 minutes on each side until golden
- Time to make the glaze: while the chicken is cooking, in a separate bowl mix the minced garlic, 1 spoon of sugar and 40 ml of balsamic vinegar of Modena. Mix well and pour the mixture into the skillet. Remove the toothpicks from the chicken breasts
- Bring to a simmer and stir until the glaze has thickened
- Pre-heat the oven to 190C
- Place the chicken breasts (without the mixture) into a baking tray and cook for 15 minutes until the chicken is thoroughly cooked and crispy, and the mozzarella has completely melted.
- When plating, pour a couple of spoons from the mixture and drizzle the chicken breasts
Enjoy with a nice glass of wine ๐ท
