Caprese Stuffed Balsamic Chicken

Caprese salad 🥗 is a simple Italian salad, made of sliced fresh mozzarella, tomatoes, and basil. Just like pizza Margherita, it features the colours of the Italian flag: green, white, and red 🇮🇹.

Now imagine caprese salad 🥗 stuffed in lean chicken breasts 🍗 seasoned with balsamic vinegar of Modena 😋 I am one of these people who loves balsamic vinegar of Modena 😋. Did you know there are some brands which cost more than a vintage bottle of champagne 🍾 ? I was shocked to find this out! 😳

Back to the recipe: it is quick and easy to prepare, very healthy and it takes less than 40 minutes to cook 👩‍🍳 It is perfect for a weekday dinner.

Ingredients:

  • 4 boneless chicken breasts 🍗
  • 2 large tomatoes 🍅
  • 200g of sliced fresh mozzarella 🧀
  • fresh basil 🌿
  • 3-4 minced garlic cloves 🧄
  • vegetable oil
  • balsamic vinegar of Modena
  • dry basil
  • dry oregano
  • salt 🧂
  • pepper
  • 1 tablespoon of sugar – use brown sugar if you have, I didn’t so I used white one

Method:

  • Slice the chicken breasts into “pockets”
  • Season on both sides with dry oregano, dry basil, salt and pepper to taste and rub it all over the chicken breasts
  • Cut the tomatoes and the mozzarella cheese into long slices
  • Add tomato slice, mozzarella slice and some fresh basil leaves inside the chicken breasts
  • Use tooth picks to seal the contents inside the chicken breasts so the stuffing does not fall out
  • Heat 3 spoons of vegetable oil in a skillet to a high temperature
  • Place the chicken breasts in the skillet and fry 4-5 minutes on each side until golden
  • Time to make the glaze: while the chicken is cooking, in a separate bowl mix the minced garlic, 1 spoon of sugar and 40 ml of balsamic vinegar of Modena. Mix well and pour the mixture into the skillet. Remove the toothpicks from the chicken breasts
  • Bring to a simmer and stir until the glaze has thickened
  • Pre-heat the oven to 190C
  • Place the chicken breasts (without the mixture) into a baking tray and cook for 15 minutes until the chicken is thoroughly cooked and crispy, and the mozzarella has completely melted.
  • When plating, pour a couple of spoons from the mixture and drizzle the chicken breasts

Enjoy with a nice glass of wine 🍷
