Veal Schnitzel with Duck Egg and Anchovies

One of my favourite cities in Europe is beautiful Vienna! πŸ‡¦πŸ‡Ή 🌍

What comes to your mind when you think of Vienna? Amazing architecture, castles and cathedrals? Elegance? Sissy? Mozart’s Apartment? Sacher cake 🍰 ? I will leave this for another time 😝

All of the above and more are correct but for me personally, one of the things I associate Vienna (and whole of Austria ) is the Wiener Schnitzel ! πŸ₯©

A Schnitzel is a fried thin slice of breaded meat, usually thinned by a meat pounder. The meat is usually veal, pork, chicken, mutton, beef or turkey.

Here is my take on the famous Wiener Schnitzel. Note: I used both veal and pork meat πŸ₯©

Ingredients:

  • 2 rose veal fillets πŸ₯© (about 250 g) I got mine from Waitrose or
  • 4 Iberico Pork fillets πŸ₯© (mine were smaller so I doubled down πŸ˜†)
  • 150 ml buttermilk
  • 50 g grated Parmesan cheese πŸ§€
  • 4 duck eggs πŸ₯š (2 egg yolks, 2 eggs)
  • sesame seeds
  • one lemon πŸ‹
  • 30 g of all purpose flour
  • 60 g butter 🧈
  • vegetable oil
  • 40 ml milk πŸ₯›
  • fresh parsley 🌿
  • 2-3 anchovy fillets
  • salt πŸ§‚
  • pepper
  • onion flakes
