Veal Schnitzel with Duck Egg and Anchovies

One of my favourite cities in Europe is beautiful Vienna! 🇦🇹 🌍

What comes to your mind when you think of Vienna? Amazing architecture, castles and cathedrals? Elegance? Sissy? Mozart’s Apartment? Sacher cake 🍰 ? I will leave this for another time 😝

All of the above and more are correct but for me personally, one of the things I associate Vienna (and whole of Austria ) is the Wiener Schnitzel ! 🥩

A Schnitzel is a fried thin slice of breaded meat, usually thinned by a meat pounder. The meat is usually veal, pork, chicken, mutton, beef or turkey.

Here is my take on the famous Wiener Schnitzel. Note: I used both veal and pork meat 🥩

Ingredients:

  • 2 rose veal fillets 🥩 (about 250 g) I got mine from Waitrose or
  • 4 Iberico Pork fillets 🥩 (mine were smaller so I doubled down 😆)
  • 150 ml buttermilk
  • 50 g grated Parmesan cheese 🧀
  • 4 duck eggs 🥚 (2 egg yolks, 2 eggs)
  • sesame seeds
  • one lemon 🍋
  • 30 g of all purpose flour
  • 60 g butter 🧈
  • vegetable oil
  • 40 ml milk 🥛
  • fresh parsley 🌿
  • 2-3 anchovy fillets
  • salt 🧂
  • pepper
  • onion flakes

Method 👩‍🍳:

  • Place the meat between cling film and thin the fillets using meat pounder or rolling pin
  • Place the veal fillets in a small tray with buttermilk and leave to tenderness for about 2 hours in the fridge
  • In a bowl, mix the grated Parmesan cheese, onion flakes, flour and sesame seeds. Season with salt and pepper
  • In a separate bowl, beat the duck egg yolks with the milk
  • Dip the veal fillets into the egg mix and then into the coating. Turn to ensure both sides are covered
  • Heat some vegetable oil in pan – medium to high temperature
  • Add 30 g of butter and let it melt until it becomes golden brown
  • Fry the veal fillets on both sides until browned up and crisp. Set them aside
  • Melt the remaining butter in the same pan and cook to a golden brown. Careful not to burn it. Add some lemon juice to taste and stir in the chopped parsley
  • In a separate pan carefully break the duck eggs. Fry until the whites are set
  • Time to plate! Place the veal Schnitzel in a plate and top with the duck egg. Spoon on the sauce. Garnish with anchovies
  • Tip: If you like you can serve with some gherkins or chillies on the side

Guten Appetit! 🥂 😋
