am so excited to share my original recipe with you👩‍🍳 I had no specific meal in mind yesterday – I opened the fridge and decided to “scramble” a low carb protein dinner – perfect after my hour and a half long workout.

It looks like Keto Pizza. I added a little twist and decided to use my imagination – the final result was a low carb protein omelette. It took me about 40 minutes to prepare. Healthy, quick and easy! What more can you want

  1. In a medium to high heat pan pour some vegetable oil and melt half of the butter. Fry the chopped onions, spring onions and garlic. Season to taste with salt and pepper
  2. Stir occasionally and leave to cook until brown – about 7-10 minutes. Chop the sausages in small bite size pieces.
  3. Place into the mix and cook until the meat is ready (depending on whether they are beef or pork sausages it can vary between 10-15 minutes)
  4. Season with 1 table spoon of sage. Add 2 tablespoons of English mustard. Optional – if you’d like you can add 2 tablespoons of tomato paste
  5. Lower the temperature and stir occasionally. Let it cook for another 5 minutes
  6. In the meantime, pre-heat the oven to 200C.Beat the eggs in a bowl. Pour them in a round tray. Pour the veggies and the sausages into the round tray. Spread well. Add the chopped sun-dried tomatoes. Bake for 15 minutes at 200C
