Quinoa has become increasingly popular in the past few years. It is named a super food and you would see that a lot of diets and healthy regimes include this South American grain.
✅ Quinoa is gluten free, non GMO and it is usually grown organically. It is a whole grain food which makes it highly nutritious.
✅ This super food contains sufficient amounts of all essential amino acids which makes it an excellent source of protein.
✅ Quinoa can also improve your metabolism by reducing blood sugar, insulin.
✅ Eating quinoa regularly can help you lose weight. The grain is high in fibre and protein which are essential for weight loss and good health.
The list goes on and on. Having said (read) all of that, I wanted to try and cook this super food and make it even healthier by steaming some veggies 🌶🫑 🍄 It is a perfect weekday dinner, suitable for vegetarians and vegans (if you substitute the butter 🧈 I used with vegetable oil). It is also quick and easy to prepare – just under 30 minutes.
As with most meals on Dine with Delight, I like to find a healthier version (as much as that is possible) of any particular dish and share it with you 🍎.
Quinoa with Steamed Vegetables
Ingredients
Method:

Rinse the quinoa and boil it for about 20 minutes.
In the meantime chop all vegetables into small pieces.
In a pre-heated medium to high temperature pan, melt 1 tablespoon of butter (or vegetable oil)

Add the chopped onion, minced garlic and chopped carrot first. Stir occasionally until they soften. Add some water, if necessary
Then add the sliced mushrooms, courgette and peppers.
Season with salt and pepper to taste

Lower the temperature to medium and stir occasionally until all the veggies are soft and cooked
Drain the quinoa through sieve
Add the drained quinoa to the pan with veggies
Mix well
