What comes to your mind when you hear kale? “Yuck” ? “Bland”? “Tasteless”?
I have tried eating kale in salads and drink it in smoothies and never a fan of it.
This was until I realised how nutritious and healthy it is. Kale has big amounts of vitamins A, B6, C, K, folate, carotenoids and manganese. It also has relatively few calories (about 40-100 kcal per 100 g). Kale adds fiber and antioxidants to your diet. It also helps managing blood pressure and boosting digestive health.
No wonder this leafy green vegetable is labelled a superfood!
I still don’t like eating it raw or in a smoothie, so I decided to steam it with garlic and lemon. Give it a try!
Superfood Kale with Garlic and Lemon

First, wash the kale thoroughly under cold running water. Then chop it into small 2 cm pieces

Turn the hob on at a medium to high temperature. In a small pan add 1 tablespoon of extra virgin olive oil and add the kale. It might seem a lot, but it will shrink after a few minutes.

Press the garlic cloves and add to the kale. Put a lid and leave to simmer for 8-10 minutes. Add some salt to taste.

Serve warm and add a few drizzles of freshly squeezed lemon
