Low Carb Keto Lasagne

Hands up who likes Italian 🇮🇹 food 🙋‍♀️

Carne (meat) 🍖, pesce (fish) 🐠 soup 🥣, salad 🥗, pizza 🍕, pane (bread) 🍞, pasta 🍝… The list is endless and tasty 😋

Every country has culinary styles that differ from region to region but in Italy 🇮🇹 they are more prominent due to the country’s long and narrow shape surrounded by sea 🌊 Italian cuisine 🇮🇹 is a Mediterranean cuisine which offers abundance of taste and is world wide famous 🌎 🌍 🌏 Many meals only have one or two main ingredients which makes them easier to prepare 👩‍🍳

I cooked lasagne from scratch but with a twist 😋 Low carb, no dough and more cheese 🧀

Ingredients 📝:

  • 500 g mince meat 🥩
  • 250 g tomato and basil sauce (or any tomato sauce that you like)
  • 220 g mozzarella cheese 🧀
  • one onion 🧅
  • 180 g cream cheese 🧀
  • 150 g Ricotta cheese 🧀
  • 2 eggs 🥚
  • salt 🧂
  • pepper
  • dried oregano

Method 👩‍🍳:

  • First we need to make the cheese dough – pre-heat the oven to 180C. In a bowl mix the cream cheese, half of the mozzarella cheese, the eggs and add oregano
  • Spread the mixture thinly on a baking tray over a grease proof baking sheet
  • Bake in the oven for 20 minutes
  • After you take it out of the oven, let it rest for about 5 minutes and cut the cheese dough into thirds, creating three layers which we will place in a loaf pan when we assemble the lasagne
  • Make sure that the slices are not stuck to the baking paper
  • Let it cool don on the side until it gets thicker
  • In a medium to high temperature pre-heated pan, add the chopped onion and mince meat and cook for about 10-12 minutes (until the onion is soft and the meat is browned)
  • Add in the tomato sauce and lower the temperature to simmer. Stir occasionally
  • Time to assemble our lasagne – evenly slice the cheese dough into thirds (they should fit in loaf pan).
  • Add a layer of cheese dough, mince meat, Ricotta cheese and a bit of mozzarella if you want
  • Repeat until the last cheese dough piece (it should be on top)
  • Sprinkle the remaining mozzarella on top
  • Bake at 180C in the middle of the oven for 20 minutes
