Growing up I was not a big fan of moussaka – I remember when I was in school and had lunch in the cafeteria I always stayed away from it! 🤦‍♀️ It was so heavy – mince, potatoes, béchamel sauce with flour… I still frown when I think about it today! 😖

BUT I have found an amazing alternative which I like to call keto moussaka – less carbs and more cheese 🧀 (and aubergines 🍆 😏)

  1. Melt the butter 🧈 in a high temperature pan and place the onions and garlic. Season to taste with salt, pepper and paprika
  2. Add a little bit of water and steam (cover with the lid) for about 10 minutes until all ingredients are soft. Add the chopped aubergines and mix well.
  3. Once all the ingredients are soft and mashy, lower the temperature and add the beef mince and cook well for about 15 minutes
  4. Add the tomato paste which will thicken the mix
  5. Pre-heat the oven to 180C
  6. Pour the mixture onto a baking tray and cover with lots of grated mozzarella
  7. Bake at 180C for 25 minutes
