Growing up I was not a big fan of moussaka – I remember when I was in school and had lunch in the cafeteria I always stayed away from it! 🤦♀️ It was so heavy – mince, potatoes, béchamel sauce with flour… I still frown when I think about it today! 😖
BUT I have found an amazing alternative which I like to call keto moussaka – less carbs and more cheese 🧀 (and aubergines 🍆 😏)

- Melt the butter 🧈 in a high temperature pan and place the onions and garlic. Season to taste with salt, pepper and paprika
- Add a little bit of water and steam (cover with the lid) for about 10 minutes until all ingredients are soft. Add the chopped aubergines and mix well.
- Once all the ingredients are soft and mashy, lower the temperature and add the beef mince and cook well for about 15 minutes
- Add the tomato paste which will thicken the mix
- Pre-heat the oven to 180C
- Pour the mixture onto a baking tray and cover with lots of grated mozzarella
- Bake at 180C for 25 minutes
