This traditional Italian 🇮🇹 recipe is quick and easy to prepare 👩🏼🍳 . It is also vegetarian.

- Slice the aubergines and season with a lot of salt. Set aside for an hour, so the sour juices can drain.
- Add tomato sauce , 3 finely chopped garlic clove , season with basil (use fresh one, if you have), salt and pepper. Let it simmer for about 10 minutes.
- Beat the eggs in a bowl. Pour the flour in a separate plate.
- Roll the aubergine slices in the flour, then in the eggs and finally fry in a pre-heated pan at a high temperature. Repeat until you run out of aubergine slices.
- In a baking tray start layering tomato sauce, aubergines, top with grated mozzarella. Then repeat. Top with parmesan cheese.
- Bake at 180C in a pre-heated oven for 35 minutes.
