I am absolutely in love with the country – from the beaches to the centres, from the tacos to the burritos.
And below is how I brought Mexico to my home in London.
I am not a big fan of spicy food π₯΅ but feel free to add as much or as little jalapeΓ±os πΆ and/or chillies πΆ as youβd like.Β
Mexican Night / Una Cena Mexicana – Burritos & Guacamole

Instructions
- Chop 2 red onions and pan fry until they soften. Add 2-3 crushed garlic cloves and two finely chopped bell peppers.
- Lower the temperature and stir periodically for 10 minutes. Add 500g of beef mince. Season to taste with salt, pepper and a lot of paprika. Stir well
- In the meantime boil two sweet corns.
- Time to make the guacamole – mash 2 ripe avocados, add a finely chopped red onion.
- Remove the watery part of 200g of plum tomatoes. (Don’t throw it away! We will use it for the burrito filling)
- Add a can of (drained) black beans and the watery part of the tomatoes to the burrito filling
- Add the rest of the tomatoes to the mashed avocados and red onion
- Squeeze half a lime (of a whole – up to you). Add salt to taste and mix well. VoilΓ – the guacamole is ready
- Add some tomato paste to the burrito filling if necessary
- Finally – let’s assemble our burrito. Microwave the tortillas for 30 seconds
- Add some cabbage leaves (I didn’t have any so I used iceberg lettuce), some of the beef/bean filling, grated mozzarella and finally add some soured cream
- *You could also add some jalapeΓ±os, if you’d like. Roll the burrito π―
