What traditional food comes to your mind when you hear “Christmas”?

Turkey? Mince pies? Different type of party food sold at pretty much every supermarket?

I wanted to take a common Christmas meal, pigs in blankets, and give it a Dine with Delight twist – salmon in blankets. Perfect for parties, bite-size food and absolutely delicious!

Perfect twist to the traditional Pigs in Blanket recipe.

Ingredients

    To marinate the salmon fillets

    Rest of meal

    Instructions

    1. Mix well the maple syrup, soy sauce, lemon juice, salt and minced garlic cloves in a bowl
    2. Chop the salmon fillets into bite-size pieces
    3. Marinate in the bowl. Put a cling film foil on top and leave in the fridge for about an hour
    4. Roll each salmon piece in a strip of bacon
    5. Add a few table spoons of olive oil in a large skillet and pan dry the wrapped salmon pieces until they are well cooked and golden (10-15 minutes should be enough at a high temperature)
    6. Pre heat oven to 180C. Place the salmon in blanket pieces on a baking paper and bake in the oven for about 15-20 minutes

    Notes

    • Best served with greens – I had Brussels sprouts and roasted asparagus
